How to prepare
Steaming long beans is better than boiling because it prevents the beans from overcooking and preserves a vibrant green colour.
Long beans should be firm and should snap when bent in half. You will want to peel away the fibrous strip along the edge (simply snap off the end and slowly pull the fibrous strip).
Fill the steam basket with the washed green beans and place a lid on the pot. Turn the heat on to high and allow the water to come up to a boil (about 3 minutes). Once the water begins to boil, allow the beans to steam for about 5 minutes, or until they reach your desired level of tenderness.
