Rince them well, dry them and wrap them in a kitchen towel. Store them at the bottom of your fridge.

Jerusalem artichokes are also called sunchokes, they are a distant cousin of the sunflower and are a good source of iron. In terms of flavour, they are nutty, sweet and crunchy.
