How to cook
Jerusalem artichokes are also called sunchokes, they are a distant cousin of the sunflower and are a good source of iron. In terms of flavour, they are nutty, sweet and crunchy. They can be cooked the same way as you usually cook your potatoes or parsnips: roast them, sautéed, or puréed into a delicious soup. Here is a recipe we particularly like.
