Tropical fruit soup with Kiwi and Lime

Tropical fruit soup with Kiwi and Lime

  • 450ml of fresh orange juice
  • 2 tbsp fresh lime juice
  • 2 large mangoes
  • 2 papayas

  1. Cut the skin off the papayas and mangoes and roughly chop the flesh, discarding seeds and stones. You should have about 800g prepared fruit. Liquidise this with the lime juice and enough orange juice to make the volume up to 1.2 litres.
  2. Pass the mixture through a sieve into a large bowl, cover and chill until required.
  3. Finish each serving with a few slices of peeled kiwi fruit in the centre, the seeds of half a passionfruit drizzled over, and a thin slice of lime.
