Artichoke cooked with white wine

You will need:
2 medium artichokes
1 cup dry white wine
1 Tbsp cold pressed olive oil
1 chopped garlic
1/4 cup chopped parsley
salt and Kampot pepper

Instructions:
1 – Start by cleaning the artichokes: prepare a bowl with ice water and lemon juice. Rinse the artichokes well under cold water. Pull off any tough leaves from the bottom part and cut out the stem. With a pair of scissors cut off the spiky part of the leaves. Cut the artichoke in half lengthwise and remove the hairy part of the core, put the halves in the lemony water while you do the same with the other artichoke.
2 – Drain the artichokes well, leave them on a kitchen towel with the cut side down for a couple of minutes.
3 – In a skillet with lid, heat the olive oil. When it’s hot add the artichokes and grill both sides for around 2-3 minutes each side.
4 – Add the garlic and fry until golden and season with salt. 
5 – Turn artichokes halves cut side down, carefully add the white wine (it will splash) and immediately put the lid on. Turn the heat down.
6 – After 15 min check if the they are cooked. Insert a knife at the thickest part and if there is no resistance it is ready (cooking time will vary according to the artichoke size).
7 – Take out the lid and if there’s still much wine left reduce it down.
8 – Serve the artichoke with the wine reduction on top, sprinkled with parsley.
